Killer Bee from Sunshine’s Bar on Nevis, West Indies

Last month we took a cruise on Adventure of the Seas, and at one stop we took a catamaran from St. Kitts to Nevis.  Beachside was a bar called Sunshine’s.  The staff on the catamaran told us if we went there, not to drink more than two “Killer Bees” in fear we miss the sail back home.  And they were right – just one was enough to make me quite tipsy.

I tried to recreate the drink as much as possible, and as much as can be remembered…

This recipe makes 4 drinks.

Ingredients:

1/4 cup honey
1/2 cup orange juice
1/2 teaspoon fresh ground black pepper (freshly ground! It gives the drink an ever so slight burn to offset the sweetness)
1/2 cup club soda
1 cup Mt. Gay Eclipse rum (any golden rum can be substituted)
1 cup passion fruit juice (I used Ceres brand which is a passionfruit and pear blend)
Grenadine
Fresh grated nutmeg for garnish, use about 1/2 teaspoon

Put the honey in a microwave safe container with a little bit of water and microwave it for 15 seconds or so, to turn the thick honey into more liquidly fluid.

Mix all the ingredients except nutmeg and stir well to get the honey mixed in thoroughly.  Chill, if your juices were not cold, and pour into rocks glasses.  Float a little grenadine on the top, and then grate generous dusting of nutmeg on the drink.  Serve, and feel the Sunshine coming from inside you.

Note: the drinks at Sunshine’s very very strong.  I’m certain that there was some 151 proof rum in the mix somewhere – but I’m afraid to try to find the right amount myself. :)
