- 1/2 cup brown sugar
- 1/4 cup non-funky, drier rum (I use Mt. Gay for this)
- 1 tablespoon Ancho chile power
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 tablespoon garlic salt
- 1 tablespoon white pepper
- 2 tablespoons balsamic vinegar
- 1 tablespoon apple cider vinegar
Mix, apply to your pork and let marinate for up to an hour, then smoke your pork per your normal preferences.
